Paleo pancakes

I sorted through a lot of pancake recipes to find this one.  A lot of paleo “pancakes” are nothing more than smashed fried bananas or pumpkin.  These have the taste and texture of the pancakes I grew up with, and have become a go to breakfast or dinner option in our house.  They can also take the edge off when I’m craving some bread type carbs.

Paleo pancakes

serves 2-3

1/2 cup organic coconut flour

1 1/4 cups canned coconut milk

4 eggs (room temperature)

1 tsp baking soda

2 tsp organic vanilla extract

1 tsp cinnamon

1 Tbsp raw honey, melted

blueberries, chopped pecans, diced strawberries or shaved coconut (optional)

 

Whip together eggs until light and fluffy.  Add coconut milk, vanilla and honey.  Whip again until frothy.  Add flour, soda and cinnamon and stir briskly.  Stir in berries, nuts or coconut if you like.  The batter will be slightly thicker than regular pancake batter, and have a light fluffy texture.  Melt dome duck fat or coconut oil on a griddle and cook pancakes on both sides until lightly browned.  I would recommend keeping the pancakes small so they are easier to flip.  Serve with organic maple syrup, agave nectar, raw honey or fresh berries.  Enjoy!
