Ground bison can be found at many supermarkets now. It is a very lean, healthy red meat that tastes a lot like grass fed beef. While the steaks can be a bit dry, I love using ground bison for meatballs. I use store bought sauce, and just add a few ingredients like extra garlic and red pepper flakes to make it just right. Just make sure you read the ingredients in the sauce to avoid added sugars, non paleo oils and preservatives.
1 lb ground bison
1 tsp dried herb mix like herbs de provence
about 2 Tbsp almond, or walnut meal
1 tsp minced garlic
1 tsp red pepper flakes
1 jar paleo friendly spaghetti sauce
Mix all ingredients except sauce together until well incorporated. Divide meat mixture and roll meatballs into about 2″ diameter. Heat 1-2 Tbsp olive oil in a pan and brown meatballs on two sides until they are cooked through. Drain balls on a paper towel, then add to jar of sauce in another sauce pan. Simmer for about 20 minutes so sauce and meatballs can flavor one another.
