Paleo truffles

Here’s another simple and delicious dessert that is surprisingly paleo friendly.  I actually found this one in this month’s Bon Appetite magazine.  My fiance took some to work and they were devoured with rave reviews.  I chose to use hazelnuts and pistachios, but you can coat them in anything you want.  They would be great with walnuts, pecans, toasted sesame seeds, coconut or even more cocoa.

1 1/2 cups medjool dates pitted

3 tbsp raw organic cocoa powder

3 tbsp raw shredded coconut

pinch of sea salt

1/4 cup hazelnuts lightly roasted and chopped

1/4 cup pistachios lightly roasted and chopped

Put first four ingredients in a food processor and blend until almost smooth.  You may need to add a bit more coconut if paste is too wet, or water by the teaspoon if it is too dry.  Using a spoon scoop out small rounds of mixture and roll them in your hands to make a ball.  Then roll mixture in the nuts or coating of choice, until they are coated.  Serve as a dessert or mix with trail mix for a great snack.
