Persimmon Margarita

Try this twist on a margarita instead of the more traditional strawberry or mango flavors.  Make sure you use Fuyu persimmons because other varieties can have a very astringent unpleasant flavor unless they are very ripe.  Fuyus are sweet and tender, with a consistency like a peach, and look a bit like an orange flat tomato.  Just because we’re paleo doesn’t mean we don’t want to enjoy a cocktail every now and then right?  Just keep the tequila blanco and your in the clear.

1 fuyu persimmon seeds and stem removed

1/4 fresh lemon juice

1/4 fresh lime juice

1 tsp raw agave

1/2 tsp cinnamon

1/2 tsp salt

splash of club soda

1-2 shots premium tequila blanco

On a small plate sprinkle cinnamon and salt.  Run a lime wedge around an 8 oz glass and dip the rim into the spices. Cut persimmon into chumks and  puree in a blender until smooth.  Add lemon and lime juices along with tequila and shake to mix well.  Add ice to glass and pour mixture over it.  Add club soda and stir.  Enjoy!
