Grilled kale salad

If you enjoy kale chips you will love this summer salad.  Kale has a flavor a bit like a mustard greens but milder.  The sweet plums and tangy vinegarette help cut through the crispy texture and slightly pungent flavor of the lettuce.  The original recipe calls for ricotta, which I did use, but for the purposes of the blog I will leave it out of this recipe.

12-16 kale leaves

2 ripe plums

1/4 cup balsamic vinegar

1/4 cup olive oil +1 Tbsp

1 tsp raw agave

salt and pepper to taste

Trim stems from kale leaves and discard.  Toss the leaves with about a Tbsp olive oil and season with salt and pepper.  Grill leaves over medium high heat until they begin to char and crisp around the edges.  Since there is so much moisture in the leaves they will pop quite a bit so don’t be startled.  Slice and pit plums.  Make vinegarette by whisking together balsamic, 1/4 cup oil, agave and salt and pepper.  Combine plums and kale and toss in the dressing.  Serve over ricotta if desired.
