Lemon herb pork chops

Here’s another simple, weeknight meal that doesn’t require heating up the kitchen by running the oven.  Serve this with a grilled kale salad (yesterday’s recipe) and a grilled sweet potato for a healthy, filling meal.

4 thick cut pork chops

1 tsp fresh thyme

1 tsp fresh oregano

1 tsp fresh parsley

1 tsp fresh spicy basil

2 tbsp fresh lemon juice

salt and pepper to taste

Heat grill to medium high.  Meanwhile chop herbs and mix together.  Season chops on both sides with salt and pepper, then coat with fresh herbs.  Grill until cooked through, squeezing lemon juice over the meat on both sides while it cooks.  Let rest for 5-10 minutes before serving.  Enjoy!
