These tomatoes make a great weeknight meal for the whole family. They even taste a bit like pizza, especially if you are primal and choose to use the cheese. If you don’t have tomatoes, this recipe is great with fresh zucchini or squash as well. I served mine with a squash and quinoa salad.
1 lb spicy Italian sausage, casings removed
1 tbsp fresh oregano
1 tbsp fresh thyme
1 tbsp fresh basil
1 tbsp fresh parsley
1 tsp fennel seeds
8-10 medium tomatoes
1 tbsp olive oil
salt and pepper to taste
1/2 cup shredded grass fed cheese (optional)
Prep tomatoes by cutting the tops off of each and scooping out the middle. Reserve the insides in a small bowl. Remove sausage from casings and brown in a pan with a bit of olive oil until cooked throughly. In a medium bowl, combine cooked sausage, a couple of tbsp tomato filling, and minced herbs. Add salt and pepper to taste. Fill hollowed tomatoes with sausage mixture, and arrange in a shallow baking dish. Spoon the rest of the tomato filling over the tops of tomatoes and drizzle with 1 tbsp olive oil. Cook in a preheated 400 degree oven for about 30 minutes, or until tomatoes are cooked through. Sprinkle shredded cheese over the top and serve. Enjoy!
