Grilled shrimp with chili, cilantro and lime

Here’s another great recipe for the grill.  The original called for basic shrimp with a spicy cilantro chili sauce, but I decided to do away with the sauce and marinate the shrimp with the ingredients instead.  The grilled chilis give this dish a nice kick, and the olive oil will smoke over the fire adding the flavor to the shrimp.  I tossed some asparagus in the basket too just to incorporate a veggie into the meal.

1 lb shrimp peeled and deveined

6 Tbsp fish sauce

4 Tbsp olive oil

2 tsp turmeric

1/2 cup cilantro, chopped

2-3 serrano chilis, minced

5 garlic cloves, minced

2 1″ pieces ginger, peeled and minced

1/4 cup fresh lime juice

Combine all ingredients except shrimp in a medium bowl and whisk to incorporate.  Add shrimp and stir until it is all coated in the marinade.  Let stand on the counter for at least 30 minutes.  Meanwhile, preheat a charcoal or gas grill to medium heat.  Cook shrimp in a grill basket, or on skewers just until they curl up and turn pink.  If using skewers this will only take a couple of minutes on each side.  If you use the basket you may have to stir them a few times.  Serve alongside your favorite grill sides.  Enjoy!
