Lamb shanks with lemon and carrots

This easy one pot meal is great for a cold night.  Prep time is only about 10 minutes, then just set the crock pot and go about your daily routine.  I cooked carrots with the lamb but any root vegetable you like would work just as well.  I like meyer lemons with this dish because they have a milder, less tart flavor, and they are in season right now. Like most of my recipes this feeds two people, but if you have a bigger family than I do, just double it.

2 lamb shanks

1/2 cup water

2-3 large carrots

1 shallot, sliced

3-4 garlic cloves, crushed

1 meyer lemon

sea salt and fresh ground pepper

Salt and pepper lamb shanks liberally.  Place them in the crock pot with 1/2 cup water.  Chop carrots, season with salt and pepper and add to crock pot along with garlic and shallots.  Thinly slice half of lemon and toss slices in pot.  Squeeze juice from remaining lemon half over all ingredients and discard peel.  Set crock pot to medium and cook for about 3 hours, occasionally basting with pan juices.  Its just that easy.  Serve on its own or with a nice side salad.   I made some roasted leeks with mine.  Enjoy!
