These pecans are easy to make and great for a snack or a dessert. The “caramel” is just raw honey that takes on a caramel like consistency and color after being heated. I love this recipe with pecans, but it would also be great with macadamia nuts, hazelnuts or even almonds. The parchment paper is a must, or you’ll never get the nuts unstuck from the pan.
2 cups raw pecan halves
1/3 cup raw honey
1 tsp ceylon cinnamon
1/2 tsp vanilla
Heat honey in a small saucepan until completely melted. Add cinnamon and vanilla and simmer until honey begins to bubble and rise. Turn heat to low and add pecans coating thoroughly with honey mixture. Line a rimmed baking sheet with parchment paper and add pecans and all of the honey spreading evenly over the pan. Roast in a preheated 325 degree oven for about 15 minutes or until lightly roasted, stirring nuts after about 10 minutes. Sprinkle sea salt over the top and allow to cool completely. Break nuts apart and enjoy!
